Coming in second ain’t so bad. You may not be standing at the top of the podium, but you still get a medal right. I have a box full of 2nd place trophies from my BMX racing days to prove you can always have fun even without the gold.
There are plenty of examples where a close second was nothing to throw your nose up at. Pumpkin pie, for example, is #1 at Thanksgiving but I prefer a slice of its vice president the Sweet potato pie after my turkey and green beans. An I phone might be top dog on Best Buy’s shelves, but Andriod makes a damn good product and gives Apple a run for their money. A Mercedes Benz could be the most highly regarded key to have on your keychain, but my Toyota with 250,000 miles is doing just fine for me.
The point is a close second might be what the doctor ordered, and this weeks recipe fits the bill. As I got deeper into my health journey, I started searching for ways to have my cake and eat it too, so to speak by making my favorite foods healthier. It’s now an obsession of mine. Look, rice is rice like an orange is an orange. This recipe is less about fooling you into thinking you’re eating rice and more about coming in a close second on flavor and texture but beating the pants off the original when it comes to health. I don’t think I could find an easier recipe to share if I tried. It works as a replacement for just about any recipe where rice would be used. Let’s cook
Cauliflower Rice
- 1 head Organic Cauliflower
- 1 tablespoon grass-fed butter or ghee
- 1/4 tsp Sea salt or to your liking
- Steamer basket
- Potato masher or large fork
