Twenty five years ago I was 19 and working at another one of my many short lived jobs. This time it was Costco. The old school Costco before flat screen tv’s, solar panel demos, trollers flying around the registers trying to sell you into an “Executive Membership”, and before conveyor belts. I had the glamorous job of a caller. This was the guy, or gal, who worked next to the checker calling out the SKU # of every item as they moved the merchandise from one cart to another. I did like the job because there was always something that came up with a bad or missing number and the “caller”, me, had to turn into a runner. You got to run as fast as you could back to the location of the item with the mission SKU and get it off the price sign, then run back to the register to call it out. It felt like a relay race, I loved it.
The Costco of today is far removed from just 5lb jars of Best Foods and cases of Coca Cola. It really has turned into a place where you can find lots of clean foods. Their organic section progressivley gets bigger, and they even cary my favorite grass-fed butter, Kerry Gold.
I understand we can’t always set up our days to spend hours in the kitchen cooking scratch meals, especially in today’s work and after school activity focused society. This weeks recipe utilizes all Costco products that cut huge amounts of prep time out of the process. A braising techinique adds loads of flavor to the vegetables and renders a texture everyone will love. Check it out I hope you like it. Lets cook
Braised Broccoli & Sausage Bake
- 4 True Story Organic Sweet Italian Chicken Sausages
- 2 cups Organic Cauliflower Florets
- 3 cups Organic Broccoli Florets
- 1 large or 2 small Organic Sweet potatoes cubed
- 3 tablespoons sliced garlic
- 1/2 diced red onion
- 1 tablespoon chopped fresh basil or pesto
- 1/4 cup avocado oil
- 3/4 cup vegetable or bone broth
- 1/2 teaspoon salt
- Baking dish
Method
- Slice the sausages into 1/4 inch rounds
- Peel and cube the sweet potatoes
- Chop the cauliflower and broccoli into 1″ pieces
- Add everything to the baking dish and mix together with your hands
- Cover with parchment then foil and bake in the oven at 350 for 50 minutes stiring half way through at 25 min (at this point you can stop and finish it the next day or do the next step if eating that night)
- Remove foil and bake another 30 minutes. 40 minutes if its cold from the fridge
